Healthy pumpkin pie

Pay de calabaza saludable.

As a fall season staple, the pumpkin pie recipe is popping up everywhere in multiple versions once again. They’re all likely really tasty in their own way. Still, it wouldn’t hurt to throw in a healthier version into the mix, especially right now that we’re all pretty stationary and may be wanting to clean up our diets a little bit. So, here’s a naturally-sweetened, dairy-free, crustless iteration of the must-have pumpkin pie recipe.

Ingredients:

- 1 can (15 oz) of pumpkin puree

- 3 eggs

- ¼ cup pure maple syrup

- ¼ cup coconut sugar (or organic cane sugar)

- ¼ cup unsweetened almond milk (instead of whole milk, though any milk will do)

- 1 tsp vanilla extract

- 1 ½ tsp cinnamon

- ½ tsp nutmeg

- ½ tsp ground ginger

- ½ tsp allspice

- ¼ tsp salt

- Fat-free or low-cal ice cream for topping (optional)

Directions:

1. Preheat your oven to 350 °F.

2. Grease a pie pan.

3. Make the filling: In a large bowl, add the pumpkin puree, eggs, pure maple syrup, coconut sugar (or substitute), almond milk (or substitute), vanilla extract, cinnamon, nutmeg, ground ginger, allspice, and salt.

4. Mix until well-combined and completely smooth. Pour into the greased pie pan.

5. Bake for 50-60 minutes until it’s no longer jiggly.

6. Take the pie out of the oven, and let it cool for at least an hour before serving.

7. Top with a scoop of ice cream (optional), and enjoy!

This recipe serves 9 (1 slice per person). Once you’re ready to store any leftovers, or if you’re saving the whole pie for later, wait until it’s completely cool. Then, wrap it up or place it in an airtight container. Store it in the fridge for up to 4 days, and enjoy it fresh when you’re ready!
